The selection of grapes and the rigorous control of fermentation, conservation and aging processes, as well as resting for months in the bottle, make Bodegas Alaude wines express their own character and personality .
From the selected vineyards, some 8,000 kg of grapes are harvested by hand, from the area with the best ripeness of the grapes. In the cellar, the clusters are manually selected and vinified in stainless steel tanks of 10,000 l.
For its elaboration, 4,000 kg items are selected from the oldest vines, with very ripe and concentrated grapes. In the cellar a double selection is made, first in clusters and then grain by grain after destemming. They are vinified in 5,000 l tanks, with manual bazuqueo to enhance the extraction of the components of the grapes.
